Thanksgiving Sweet Potato Sheet Pan

An easy chopping recipe. Let the oven do all the work.


Total Cooking Time: 1 hr.


INGREDIENTS

  • 2 medium sweet potatoes, cut into 1-inch cubes

  • 4-5 sausage links, cut into 1-inch slices

  • 1-2 bunches of broccoli, chopped

  • 3 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tsp garlic powder

  • black pepper

  • salt

  1. Preheat your oven to 450F.

  2. Line a baking pan with parchment paper or cooking spray.

  3. Peel and chop your sweet potatoes into bite sized chunks.

  4. In a small bowl, combine all your seasonings + sauces.

  5. Pour out half the sauce into a large bowl. Add the sweet potatoes and toss in the sauce.

  6. Pour out the coated sweet potatoes onto the sheet pan. Spread out to make sure none of them are overlapped.

  7. Bake the sweet potatoes for 15 min. Meanwhile slice your sausages.

  8. Remove the sheet pan and move the sweet potatoes to the sides of the pan, making room for the sausages.

  9. Add the sausages to the pan and bake for 10 min. Meanwhile chop the broccoli.

  10. Toss the broccoli in the bowl with the remainder of the sauce.

  11. Remove the pan, flip the sausage slices with tongs and move to the side of the pan to make room for the broccoli.

  12. Add the broccoli to the pan and bake for 15 min.

  13. Remove the pan and sprinkle salt + pepper.

  14. Use the tongs to mix the sheet pan ingredients.
