Peanut Butter Cookies

COOKING LEVEL: noob beginner standard

A gluten free twist to Grandma's traditional recipe.


Serving Size: 28 cookies Total Cooking Time: 18min. + 2 hr chill time


INGREDIENTS

  • 1 cup vegan butter, softened

  • 2 large eggs, room temperature

  • 1 tsp vanilla

  • 1 cup brown sugar

  • 1 cup white sugar

  • 1 cup GF peanut butter (Jif's or Justin's)

  • 3 cups GF flour

  • 1/2 tsp salt

  • 1 tsp baking soda

  • 1 tsp baking powder


  1. In a large bowl, mix the butter + sugars.

  2. Beat the eggs in.

  3. Add the vanilla + peanut butter and mix altogether.

  4. In a smaller bowl, sift the flour + baking powder + salt.

  5. Add the baking soda and whisk all the dry ingredients together.

  6. Pour the dry ingredients into the large bowl.

  7. Mix till just incorporated.

  8. Roll your cookie dough into a large hockey puck shaped disk.

  9. Wrap in plastic wrap and refrigerate for 2hr.

  10. Preheat your oven to 350F.

  11. Line a baking sheet with parchment paper.

  12. Use a cookie scoop to form 1-2 tbsp balls of cookie dough.

  13. Using a fork, press down in two directions on the dough balls to create a cookie shape.

  14. Bake for 10-13 min.

  15. Take out from the oven and let it cool completely. The heat from the pan will bake them a little more.

  16. Wait till cooled to transfer to a cooling rack.
