Banana Nut Muffins

COOKING LEVEL: noob beginner standard

An easy dessert or breakfast treat that only requires one bowl.


Serving Size: 12 Total Cooking Time: 40min.


INGREDIENTS

  • 3 extra ripe bananas, mashed

  • 1 egg

  • 1/3 cup oil

  • 3/4 cup sugar

  • 1 1/2 cup GF flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 3/4 cup chopped walnuts

Optional Glaze Topping

  • 2 tbsp brown sugar

  • 1 tbsp oil

  • 1/2 cup of walnuts


  1. Preheat oven to 350F.

  2. Line the cupcake tin with cooking spray or cupcake liners.

  3. In a large bowl, use a fork to mash the bananas.

  4. Add sugar + eggs until just combined.

  5. Add the oil until mixed.

  6. Add all the dry ingredients.

  7. Mix thoroughly, making sure you get any flour at the bottom of the bowl.

  8. Fill each cupcake tin to the top with batter.

  9. Bake for 10-12 min, rotating the pan at the 5min. mark.

  10. At this point you can take out the pan and scoop the coated walnut topping on each muffin. Then pop it back in the oven to bake for 5-10 more minutes. Even if you're skipping the topping, still bake for an additional 10 min.

  11. Cool completely before transferring to a cooling rack and serving.

Recipe Notes:

  • Don't be afraid to use brown bananas. This is actually a good go-to recipe when you don't have a use for over ripen bananas.

  • For an optional topping, sprinkle some walnut pieces + brown sugar on top of each muffin before putting it in the oven.
