Reverse California Rolls

COOKING LEVEL: noob beginner standard
A few steps to prep ingredients, get used to rolling sushi, and cooking the rice. This recipe will keep you busy.
Serving Size: 6 rolls Total Cooking Time: 1hr 30min.
INGREDIENTS
Stovetop Sushi Rice (if rice cooker is not available)
2 cups of rice
2 cups of drinking water
1/2 cup apple cider vinegar
1/4 cup sugar
1 tsp salt
Rinse and drain the rice 2-3 times till water runs clear
Fill a pot with the rice and equal amount of water.
Turn onto medium high heat.
Cook for 15-20 minutes with the lid covered.
Remove from heat and stir to prevent from sticking to the bottom of the pan.
While waiting to cool, in a small bowl mix vinegar + sugar + salt.
Add sushi rice seasoning to the cooled rice and mix.
Set aside while preparing filling.
Assembling rolls
2 large avocados
5-6 Nori sheets (if frozen take them out right before rolling)
11 imitation crab sticks
1/2 cup dairy-free avocado mayo
Sesame oil topping
Sesame seeds
Scoop avocados with a spoon to maintain shape. Slice into thin, long pieces. Set aside.
Chop imitation crab sticks into tiny shavings.
Mix 1/2 cup mayo + chopped crab sticks.
On a nonstick tray or lined parchment paper, lay out a nori sheet.
Scoop rice thin and evenly onto the nori. Make sure to get the edges so that they stick when rolled.
Leaving an inch of space from the edge closest to you, add a thin line of avocado slices.
Scoop a line of crab mix on the next row behind avocado.
Slowly start rolling from the edge closest to you. Make sure to pack in the ingredients tight when rolling.
Once done rolling, make sure to seal it off with some sesame oil. You can use a pastry brush or your fingers to apply. If needed, use a little bit of extra rice as more glue.
Optional: Apply a light coat of sesame oil on the top of the roll and sprinkle sesame seeds.
Slice using a hot knife or eat it whole, hot dog style.
Recipe Notes:
I chose to use the California roll recipe and make it Korean kimbab style: crab filling but instead of white rice on the outside, it's reversed. This makes for a simpler, less messy recipe for beginners.
Some Korean side dishes that go great with these rolls are yellow radish or kimchi.
