Korean Spicy Pork 제육 볶음

COOKING LEVEL: noob beginner standard

Mix, marinate, and then cooking some spicy meat.


Serving Size: 4-6 Total Cooking Time: 1hr.


INGREDIENTS


Marinade

  • sesame oil

  • 1lb pork belly, pork shoulder or tenderloin

  • 1 yellow onion, diced into thin strips or small chunks

  • 5 garlic cloves, minced

  • 5 green onions, chopped into shavings

  • 2 1/2 tbsp red pepper paste (gochugaru)

  • 3 tbsp soy sauce

  • 1 tbsp fish sauce

  • 2 tbsp apple cider vinegar

  • 2 tbsp sugar

  • black pepper

  • sesame seeds


Marinating the meat

  1. Have glass tupperware ready. You're going to put your marinated meat in here.

  2. Chop meat into bite size pieces and add to a separate, large bowl.

  3. Add the diced onion on top of the meat.

  4. In a separate, small bowl, mix all the sauce ingredients till combined.

  5. Pour the sauce into the meat bowl.

  6. Using tongs or your hands, integrate the sauce into the meat.

  7. Add the marinated meat into the tupperware and evenly spread it out.

  8. Sprinkle half of the chopped green onion over the marinated meat.

  9. Refrigerate for an hour or overnight for more flavor.


Cooking the meat

  1. Heat a saucepan to medium high heat and add 1 tbsp of sesame oil.

  2. Add and cook the minced garlic till color starts to change.

  3. Add the first half of the marinated meat to the pan, just enough to cover the pan.

  4. Flip and cook thoroughly.

  5. Top with sesame seeds and green onion.

  6. Repeat with the rest of the meat.


Recipe Notes:

  • This marination is a Korean classic and is usually used for pork meat.

  • The recipe is usually served with a side of rice and sometimes wrapped with romaine lettuce to create a nice contrast of spice and crunch.

  • I recommend taste testing when adding the red pepper paste in increments in case of low spice tolerance.

  • This is a simple, great recipe that can also work as meal prep for the week!
