Korean Chicken Soup 닭 곰탕

COOKING LEVEL: noob beginner standard

So easy you let the stovetop do all the work.


Serving Size: 4 Total Cooking Time: 1 hr.


INGREDIENTS

  • 3-4 lb chicken thighs or breast

  • 10-12 whole garlic cloves

  • 1 chunk of fresh ginger, peeled

  • 1/2 white or yellow onion, cut in half

  • 2 stalks of large green onion or leek, chopped to fit in pot

  • 3 stalks of green onion, diced into shavings

  • 1/2 tsp pepper

  • 1 tbsp salt

  1. In a deep pot, add all the ingredients to the bottom.

  2. Fill the pot with water till all ingredients are submerged.

  3. Medium high heat: Bring the pot to boil, uncovered.

  4. Reduce to medium heat and cover with lid. Boil for 40-50min.

  5. Using a ladel or spoon, remove any excess oil or fat that rises up.

  6. Turn heat to low.

  7. Remove chicken and shred meat apart with 2 forks. Throw out the bones.

  8. Add the shredded meat back to the pot.

  9. Turn heat back to medium high heat. Cook for an extra 30 min.

  10. Taste to add more salt or pepper.

  11. Pour into bowl and add chopped green onion. Serve with a bowl of rice.


Recipe Notes:

  • This recipe is fairly simple and requires little to no work.

  • For extra flavor, add some peeled potato chunks.

  • Some people use a whole baby chicken and stuff it with dates before cooking for a deeper flavor.
