Ground Beef Bulgogi Bowls 불고기

COOKING LEVEL: noob beginner standard

If Chipotle met a Korean twist. A multipart recipe that requires different pieces to make an amazing bowl.


Serving Size: 6 Total Cooking Time: 50 min.


INGREDIENTS


Bulgogi + Sauce

  • 2 tsp olive or vegetable oil

  • 1 cup onion, diced into small pieces or thin strips

  • 1 tbsp minced garlic

  • 1 tbsp fresh grated ginger

  • 2 lb. ground beef

  • Cooked rice

  • 3-4 tbsp honey

  • 3-4 tsp soy sauce

  • 3 tbsp korean red pepper paste (gochujang)

  • 2 tbsp apple cider vinegar


  1. Medium high heat: Heat up stove pot or pan with oil.

  2. Add onion + garlic + ginger. Cook till onions become translucent and garlic changes color.

  3. Add ground beef. Make sure to break down any chunks. Cook till last piece of red meat changes color.

  4. Optional: Drain cooked beef over strainer to get rid of most liquid. Leave a little behind.

  5. Medium heat: Add beef mix back to pan + rest of ingredients till thickened.

  6. Optional: Add 1 tbsp honey if too watery. Add 1 tbsp soy sauce if too thick. Taste as you go to adjust flavoring.

  7. Scoop rice into 6 bowls. Top with the bulgogi beef and add desired toppings.


Optional Topping #1: Pickeled cucumber topping

  • medium bowl to whisk altogether

  • 2 persian cucumbers, sliced thin

  • 3/4 cup apple cider vinegar

  • 1 tbsp honey

  • salt + pepper

  1. Whisk all ingredients in a small bowl till combined. Set aside.


Optional Topping #2: Carrot strips

  • small saucepan

  • 1 tbsp sesame oil

  • 1 large carrot, shredded using a peeler

  1. Heat up small saucepan with desired oil

  2. Cook carrots and flip once.

  3. Sprinkle sesame seeds on top. Set aside.

Garnish with any of these favorite toppings + side dishes:

  • sesame seeds

  • chopped lettuce

  • sambal oelek or chili sauce

  • kimchi

  • green onion


Recipe Notes:

The great thing about this recipe is that you can substitute any part with your favorites. Use chicken instead of ground beef or buy flap meat to make a bulgogi asada bowl. There are endless options for toppings.
