Favorite Chicken Teriyaki

COOKING LEVEL: noob beginner standard

Following the order of the steps will help you achieve the desired teriyaki caramelization.


Serving Size: 3-4 people Total Cooking Time: 1hr.


INGREDIENTS

  • 8-9 drumsticks, thighs, or chicken breast

  • 3 green onions, diced into shavings

  • 1/4 onion, sliced into chunks or thin slices

  • 5 garlic cloves, minced

  • 1/2 cup soy sauce

  • 1/2 cup honey

  • 1/4 cup brown sugar

  • 1/2 cup apple cider vinegar

  • 1 1/2 tbsp cornstarch or GF flour

  • 1 tbsp sesame oil

  • 1 1/2 tsp ground or fresh ginger

  • 1/2 tsp red pepper flakes (gochugaru)

  • sesame seeds

  • optional: 1 potato, 1 carrot chopped into thin slices and chunks


  1. Preheat your oven to 375F and prepare a pan with cooking spray or parchment paper.

  2. On a cutting board, use a fork to poke a bunch of holes into your chicken. Do it for both sides.

  3. Add chicken to the lined pan.

  4. In a small sauce pot or pan, turn on medium heat. Add the sesame oil + cornstarch/GF flour. Stir till combined.

  5. Once it starts simmering, turn down the heat to low-med and add the soy sauce.

  6. Add the honey + garlic + ginger. Stir.

  7. Stir frequently till the sauce starts to thicken.

  8. Add the green onion + gochugaru + sriracha.

  9. Turn off the heat and keep stirring to thicken more. You want it like a runny glue but not pasty.

  10. Pour half the sauce over your chicken.

  11. Cook for 45-50 min. Rotate the pan at the 25min. mark.

  12. Take out the chicken and pour the rest of the sauce over the chicken.

  13. Garnish with sesame seeds and green onion.


Recipe Notes:

  • This recipe is a family and friend favorite. It's fairly simple and uses most of your pantry basics. You can also use this sauce for salmon bake.

  • Best served with a side of rice.

  • Based on your spice tolerance you can omit the red pepper flakes or add 1 tbsp of sriracha for more spice.
