Slow Cooked Lamb Ribs

COOKING LEVEL: noob beginner standard

A simple roast but with a few detailed steps to ensure it tastes right.


Serving Size: 8 Total Cooking Time: 5 hr.


INGREDIENTS

  • 5 lb. of lamb ribs

  • 10 cloves of garlic, sliced in halves

  • 2 onions, cut in half

  • 2 tsp dried rosemary

  • 2 tbsp salt

  • 1/4 tsp black pepper

  • 3 tbsp olive oil

  • 1 1/2 cup water

  • 1 cup red or white wine


  1. Preheat your oven to 220C (approx. 428F)

  2. Prep a deep dish pan with lid lined with parchment paper.

  3. Placed sliced garlic + onions to the bottom of the pan.

  4. In a small bowl, combine all the spices.

  5. Rub the seasoning onto the lamb, both sides.

  6. Cut 1 inch deep cuts into the top of the lamb.

  7. Stick garlic halves into the cuts of meat.

  8. Place seasoned lamb into the pan, on top of the garlic + onions.

  9. Add the water + wine into the pan, dunking the meat.

  10. Drizzle the olive oil on top of the meat.

  11. Cover the pan with a lid or tin foil.

  12. Reduce the oven to 170C (approx. 338F)

  13. Slow cook for 4 hours.

  14. Remove from the oven and take off the lid.

  15. Increase the oven to 200C (approx. 392F)

  16. Cook with lid off for an additional 30min.


Recipe Notes:

  • This recipe takes all day to cook, so make sure you have an empty oven.

  • You can season your meat the night before and refrigerate till ready to cook for a deeper flavor.

  • You can slice the roasted meat to stick onto skewers, grill for 5min. for some bomb lamb skewers.
