Shrimp Fajita Tacos with Crema Sauce

Although the recipe is fairly simple, it requires a lot of ingredients hence the rating.
Serving Size: 8-12 tacos Total Cooking Time: 1 hr.
INGREDIENTS
Fajitas
1/3 cup olive oil
2 garlic cloves, whole
1/4 cup fresh lime juice
1 tbsp honey
1 tsp cumin
1 tsp cayenne pepper
1 tsp paprika
1/2 tsp salt
1/2 tsp pepper
2 bell peppers (a variety of colors looks nice)
1 yellow onion
1 lb raw jumbo shrimp, peeled
1 bunch of cilantro
Taco Assembling
Corn tortillas
Fresh limes, sliced
Dairy-free Mozzarella cheese
Crema Sauce
1/2 cup plain greek yogurt
1 lime, juiced
1 tsp honey
salt + pepper
1 clove of garlic, minced
Slice the onion and bell peppers into thin strips. Set aside.
Preheat the oven to 425F.
Line a sheet pan with parchment paper or cooking oil.
Rinse the shrimp and place in a large bowl with the garlic. Set aside.
In a small bowl, mix all the seasonings + sauces.
Pour half the sauce into the shrimp bowl.
Toss the shrimp till marinated. Set aside.
Spread out the bell peppers + onion strips onto the sheet pan.
Pour the rest of the sauce onto the sheet pan and mix.
Bake for 15-20 min, flipping them at the 10min. mark.
Remove the sheet pan and use tongs to move the peppers + onions over to make room.
Place the marinated shrimp + garlic spread evenly so no overlapping.
Bake for 6-8 minutes, flipping the shrimp halfway through.
While baking, combine all the crema sauce ingredients in a small bowl.
Turn off the oven and remove the sheet pan to let it cool.
Cook the tortillas with cheese to serve.
Serve with crema sauce.
Recipe Notes:
Dairy-free cheese is an option since you have the creme sauce.
Shrimp don't take long to cook completely so make sure you don't overcook.
When cooking the tortillas, I like to use a skillet a high heat, flip once, sprinkle the cheese to melt, then place the shrimp on top.
