Peruvian Chicken Wings with Green Sauce

COOKING LEVEL: noob beginner standard
Making sure the chicken cooks properly and is seasoned right is the key to the recipe.
Serving Size: 4-6 Total Cooking Time: 2+ hr.
INGREDIENTS
Chicken Seasoning
2 1/2 pounds of chicken wings
3 tbsp olive oil
6 cloves of garlic, minced
1 tbsp cumin
1 tbsp salt
2 tsp brown sugar
2 tsp paprika
1 tsp coriander
1 tsp oregano
1 tsp black pepper
Green Sauce
1 cup cilantro, chopped
1/2 cup dairy free avocado mayo
1/4 cup plain greek yogurt
2 tbsp olive oil
2 serrano peppers
2 cloves of garlic, minced
1/2 tsp salt
1/4 tsp black pepper
Using a fork, poke a bunch of holes into both sides of each wing. This will help absorb the marination better.
In a small bowl, combine all the seasonings and spices to make a dry rub.
In a large bowl, marinate the seasoning into the chicken wings till all covered.
Cover and refrigerate between 1-4hr.
Meanwhile, in a small bowl, combine all the green sauce ingredients. Cover bowl and store in the refrigerator till time to serve.
When ready, preheat the oven to 425F.
Line a deep dish with cooking spray or parchment paper.
Add the marinated chicken wings.
Bake for 45 min. Rotate the pan at the 25min. mark.
Serve with a side of rice and green sauce.

Peruvian chicken wings are best served with some cilantro rice, your homemade green sauce, Greek salad, and a nice cold Inca Cola.
