Peruvian Chicken Wings with Green Sauce

COOKING LEVEL: noob beginner standard

Making sure the chicken cooks properly and is seasoned right is the key to the recipe.


Serving Size: 4-6 Total Cooking Time: 2+ hr.


INGREDIENTS


Chicken Seasoning

  • 2 1/2 pounds of chicken wings

  • 3 tbsp olive oil

  • 6 cloves of garlic, minced

  • 1 tbsp cumin

  • 1 tbsp salt

  • 2 tsp brown sugar

  • 2 tsp paprika

  • 1 tsp coriander

  • 1 tsp oregano

  • 1 tsp black pepper


Green Sauce

  • 1 cup cilantro, chopped

  • 1/2 cup dairy free avocado mayo

  • 1/4 cup plain greek yogurt

  • 2 tbsp olive oil

  • 2 serrano peppers

  • 2 cloves of garlic, minced

  • 1/2 tsp salt

  • 1/4 tsp black pepper


  1. Using a fork, poke a bunch of holes into both sides of each wing. This will help absorb the marination better.

  2. In a small bowl, combine all the seasonings and spices to make a dry rub.

  3. In a large bowl, marinate the seasoning into the chicken wings till all covered.

  4. Cover and refrigerate between 1-4hr.

  5. Meanwhile, in a small bowl, combine all the green sauce ingredients. Cover bowl and store in the refrigerator till time to serve.

  6. When ready, preheat the oven to 425F.

  7. Line a deep dish with cooking spray or parchment paper.

  8. Add the marinated chicken wings.

  9. Bake for 45 min. Rotate the pan at the 25min. mark.

  10. Serve with a side of rice and green sauce.

  • Have endless wings at home with this simple recipe.

  • Peruvian chicken wings are best served with some cilantro rice, your homemade green sauce, Greek salad, and a nice cold Inca Cola.
