Matcha Mochi Brownies

COOKING LEVEL: noob beginner standard

All you have to do is mix and voila, matcha!


Serving Size: 15 bars Total Cooking Time: 1hr.


INGREDIENTS

  • 1 cup mochiko glutinous rice flour

  • 1/3 cup sugar

  • 1 tsp baking powder

  • 1 tbsp matcha powder

  • 1/4 tsp salt

  • 2 tbsp vegetable oil

  • 1 egg

  • 1 cup coconut milk


  1. Preheat oven to 350F.

  2. Line a 8" brownie pan with parchment paper.

  3. In a large bowl, sift the flour + baking powder + matcha powder.

  4. Whisk in the rest of the dry ingredients together: sugar + salt

  5. In a small bowl, whisk all the wet ingredients: egg + coconut milk + oil

  6. Pour the wet ingredients bowl in to the large bowl.

  7. Mix till there are no more lumps left.

  8. Pour the batter into the parchment lined pan.

  9. Lightly lift and tap the tray to get rid of any air bubbles.

  10. Bake for 35-40 min. Rotate the pan at the 20min. mark.

  11. Remove the pan and let it cool completely before cutting and serving.


Recipe Notes:

  • Once it's cool, you can refrigerate the pan before cutting to make it even chewier. Eating as is will give more of a soft mochi texture.

  • For a sweeter flavor, you can top brownies with sifted powdered sugar or mix in white chocolate chips during step #7.

  • For chocolate mochi brownies, replace the matcha powder with cocoa.
