Classic French Crepes

COOKING LEVEL: noob beginner standard

Serving Size: 6 Crepes Total Cooking Time: 10min. + 30min chill time


INGREDIENTS

  • 1 cup GF flour

  • 1 tbsp sugar

  • 1/8 tsp salt

  • 1 cup Lactaid milk

  • 1/4 cup water

  • 2 eggs

  • 2 tbsp vegan butter or oil

  • 1/2 tsp vanilla


  1. In a large bowl, sift the flour.

  2. Add the rest of the ingredients and whisk till no clumps.

  3. Cover the batter and refrigerate for 30min.

  4. Heat up a large saucepan and add 1/2 tbsp of oil. You can use a pastry brush to evenly coat the pan.

  5. Pour 1/4 cup of batter at the center of the pan. Then quickly tilt the pan in a circular motion so that the batter spreads into a thin circle.

  6. Let it cook for 1-2min before using a thin spatula to flip. It may take a while to get used to it but practice makes perfect.

  7. Remove the crepes to a plate to add filling later.

  8. Once all the crepes are done, use dairy free Cool Whip, sliced fruit, or nutella to fill your crepes. You can make crepe cones, a crepe cake, or crepe rolls.


Recipe Notes:

  • How to make a crepe cake: spread a thin layer of dairy free Cool Whip between each layer of crepe till you have a stack.

  • How to make Nutella crepes: spread a layer of Nutella all over the crepe. Then fold the sides towards the center before rolling it longwise. You can also fill with sliced strawberries or bananas.
