Air Fryer Fish Tacos with Baja Sauce

There's a lot of ingredients and steps at play, but once you get the hang of it this recipe will become a go-to for Taco Tuesday.
Serving Size: 12+ tacos Total Cooking Time: 30min.
INGREDIENTS
Fish Taco Seasoning
2 eggs, whisked
1 lb cod
1 tsp paprika
white corn tortillas
dairy free mozarella cheese
1/2 cup GF flour
1 cup GF breadcrumbs
1/4 tsp cayenne pepper
2 tsp chile lime seasoning from TJ's
3 tbsp italian seasoning
1 tsp garlic powder
1/2 tsp salt
black pepper
Preheat your air fryer to 400F.
Prepare 2 shallow dishes and 1 bowl.
In the 1st dish, pour out the flour. Set aside.
In the 2nd dish, whisk 2 eggs. Set aside.
In the last bowl, whisk breadcrumbs + rest of seasonings.
On a cutting board, pat cod dry with paper towels.
Rub salt + black pepper + paprika into the cod both sides.
Line the air fryer with parchment paper.
For each cod fillet, take turns coating into each dish.
First, coat both sides of the cod with flour.
Next, dunk the coated cod into the egg mix.
Let excess drip off before tossing into the breadcrumb bowl.
Make sure completely covered before adding to the air fryer.
Repeat this till air fryer is filled. Don't stack on top of another.
Air fry for 10 min, flipping at 5 min.
Meanwhile coat the rest of the fillets.
Cook all of the fillets and set aside.
Prepare a large frying pan or skillet at high heat.
Fill the pan with tortillas, careful not to overlap.
After 1 min, flip the tortillas and sprinkle a small handful of cheese on each.
Set aside tortillas on a tray and cut a chunk of cod onto each tortilla.
Serve with baja sauce.
Baja Sauce
1/2 cup of plain yogurt
1/2 tsp dill weed
1 tbsp relish
1 tsp of dijon mustard
1 tbsp fresh lemon juice
1 1/2 cups of sliced cabbage
In a small bowl, combine all wet ingredients.
Add the dressing to the cabbage slices. Set aside to serve.
Recipe Notes:
This recipe has a lot of steps and makes for a fun group recipe.
You can top with pico de gallo, guacamole, or your homemade baja sauce.
